The Houston barbecue scene is constantly evolving. On any given month or year, a barbecue joint may get a burst of creativity and add new dishes to its menu, while others may settle in and concentrate on simply providing a solid Texas trinity (that would be brisket, ribs and sausage).

Any list of the best barbecue in Houston should take into account a constant transformation in the art and science of smoked meats. All types of vendors should be included: brick-and-mortar joints, temporary popups and mobile trucks/trailers are fair game.

This list of the top 30 barbecue joints reflects a snapshot of vendors producing the most inventive and consistent barbecue in 2026. We've stretched the boundaries of greater Houston a bit, including soon-to-be-suburbs such as Montgomery and Crosby.
